Onion Soup

This recipe I am going to share, belonged to her. She used to cook this soup during winter and following family tradition I make it every winter; for me It is a way to honor her memory. The flavor always bring to my memory her voice and the moments I shared with her.
- 4 medium white onions
- 3 garlic cloves
- 2 medium potatoes
- 1,5 lts vegetable stock
- 1 cup cream (18%)
- 50 ml white wine (optional)
- 30 gr butter (can be replaced by olive oil)
- Thyme (fresh or dry)
- salt, white pepper.
1) In a pot heat the butter and add the garlic cloves minced.
2) Add the onions cut in medium size cubes and sweat (I recommend add a little bit of salt to accelerate the process).
3) When onions turned transparent, add potatoes cut in medium cubes. Saute onions and potatoes for five minutes and add white wine. Let wine simmer to evaporate alcohol
4) Add vegetable stock. Simmer till potatoes are tender.
5 y 6) Blend the soup until smooth, pass to a strainer if needed. However, if you blend enough time it will be fine. Return soup to a clean pot and re-boil. Add cream and season with salt, white pepper and thyme.
This soup can be accompanied with grilled toasts with butter and garlic. Or, if you like croutons, adding some to the soup it is a great idea.
Note: cream can be replaced with milk or cheese cream.
Some words about this soup I made today.
My husband already knows this soups (it is his favorite one) and as always he enjoyed it a lot. For him, the soup was creamy and the balance of flavors perfect. He decided to follow my advice and ate the soup with a big toast with butter and garlic.
About the challenges involved, this recipe was really easy to do, took me around 40 min. I would change something about this recipe? No, absolutely no, I like how it is, and I would not change anything since in this way is simply marvelous. What's more, I like to keep the familiar tradition of this recipe.
I would like to add, that a good thing about this recipe is that the use of potatoes as a technique to give creamy consistency to soups can be apply to any others; In matter of fact, I already used potatoes for leek soup, garlic and spinach soups.
I tell you, try this onion soup! I assure you, you are going to enjoy a lot, specially in cold days.
